Try these stuffed flat-breads with boiled potatoes and my favorite spices. These breads are filling-complete nutrition and a great way to start your Hectic Day.
For doing it fast and convenience I peeled and diced the potatoes thus, boiling them was only 10 minutes total.
I used 1 large potato and 2 cups of flour which made 4 paranthas. You can store the dough in fridge for a day or two in an airtight container and it can be reused.

Optionally add fine chopped coriander and chilli for more sharp flavour.

The green dried leaves are of Mint. I dry fresh mint in my kitchen for few days and store it up to a year. Mint + potatoes is an awesome combination. Try it
