Stir Fry Veggies with Desiccated Coconut

Past few years I have had the chance of visiting South of India quite a many times, and with every visit I am becoming a bigger fan of the neat flavors of my country’s southern region.  Easy to do, rich in nutrients, light on your stomach and always Yum! What more to ask from food

My husband likes to have only vegetables in his dinner, so stir fry is always a better option to give him a bowl of greens which is filling too.  I tried this dish last night to be surprised by its plain beauty.  Its again easy, pretty, absolutely awesome, just the way I want.

Lets gather the ingredients required, just as in the picture below you can dice the vegetables in same quantity.  I used 1 small Katori (cup) each of

  • carrot
  • Beans
  • Capsicum
  • Cabbage
  • Beetroot
  • Onion and 1 little green chilli

The spices needed is mustard seeds (if you have cumin add cumin), a hint of asafoetida (optional), 2-3 whole red chillies and fresh curry leaves.

Start heating 1 tbsp of ghee / Coconut oi in a pan

Add all the spices mentioned above and let it splutter

Add the Diced Cubes of Onions.

Keep the flame on a medium high and keep stirring.  I was looking for stir fry texture, firm yet cooked, so keep the heat up during all the time.  The dish will be finished in some five minutes.

The browning of the onions on the edges gives the onions a beautiful texture to feel in your mouth.  After adding the onions put cabbage dices and stir

Add Chopped chillies with the cabbage to have a subtle flavor of its sharpness rather having a lot of chilliness in the dish.

Followed by carrots and beans.  We are introducing veggies according to the cooking times they need in a pan.   So that each of them is cooked properly yet keeping the firm texture.  So if you are using Broccoli or cauliflower, then they should have gone in the pan alongside cabbage for better cooking. Also this ways they are individually giving the dish their flavors

Now is the time to add Chilli powder, choose your own flavors– add yellow chilli powder or Sumac Or Crushed black peppers.   Make your own blend.  Stir well the spices

Finally add beet and capsicum.

After a minute of adding the last veggies add the desiccated coconut, add fresh if you have it available otherwise add the dry one.

Mix it well

Add 1/2 tsp salt

Toss well and serve immediately.

Now since I love a little liquid sauce in the veggies more so I took out a little of these veggies (before coconut was added) in a different pan and added some coconut cream.  I wish I had fresh coconut milk, but the substitute was as fine as original.  And here is what it became

This gave me a little saucy veggie.  Just for mixing in my Rice Dish.
