Sabudana Vadai is a very popular dish all over Mumbai region and all of central India but it is now a household favorite all over. It is mostly cooked when people are fasting on auspicious days and do not eat any GRAIN particularly. But nowadays, it has become an all day snack and it is equally popular on non-fasting days too. The following is a sequence of the recipe along with ingredients and instructions.
Ingredients: 1 cup of dry roasted peanuts, 2 small boiled potatoes, 2 Cups of soaked sago pearls, green chilli chopped, coriander chopped.soak Sago pearls (sabudana) for 2 hours in cold water, drain for half n hour then it is ready to useBoiled and cooled potatoes and dry roasted peanutsNow grind the peanuts coarsely, fine chop green chillis and coriander. Mash all of them evenly with soaked sabudana-SagoMash all the ingredients well and smooth, add Pink Himalyan salt (or regular salt), 1/2 tsp of red chilli powder, 1/2 tsp of black crushed pepper. Squeeze half a lemon juice if you like. Now roll small patties slightly flattened.Deep fry till nice and golden. Be cautious with the temperature of the oil. Don’t immerse in smoking oil. Each patti will take around 1 or 2 minutes to fry properly. Best served with Chutney and Chai. I served with lovely sweet melons to create a contrast of flavors.
