This is a regular in the all day menu for guests at our B&B. Whenever a guest is hungry, any time of the day or late night check in, one thing they always order is Masala Cheese toasties. One of my guest Tricia fondly named it as ‘Payal’s cheese toasties’ and still remembers me whenever she is making these… I feel so happy, if with food I am able to connect with so many people and have been able to touch their lives somehow even in tiniest way..
So here it is Dear Tricia, the Payal’s Cheese Toastie dedicated to you and to all my dear dear Guests who have visited us.
Let’s assemble all the ingredients:
Fresh Sandwich Bread Slices
1 medium onion finely chopped
1 medium green chilli finely chopped
1 medium firm tomato finely chopped
fresh coriander finely chopped
grated cheese or cheese slices
Secret ingredient : Chilli powder- a generous pinch of red Chilli powder
and Salt of course
Mix all the ingredients in a bowl. Gently toss
Now mix the grated cheese (you can use any kind of cheese, though I have felt simple processed cheese is best as any other strong cheese will overpower the flavor of the mix). No worries if you don’t have brick to grate use cheese slices. That is equally beautiful in texture.
Now heat a grill pan and toast the sandwich with butter preferably as that gives the best texture and crunch to the toastie. Toast well from each side, slightly pressing it.
Serve only HOT
