Feeling super lazy.. but didn’t want to break my promise to myself to post everyday.. So here is what I did for today’s lunch.
Curd Rice
Ingredients (for just yourself) |

Boiled Rice |
1 big cup |
Curd |
Half a cup |
Cold Milk |
quarter of a cup |
Salt |
To taste |
Ginger (finely diced) |
1 inch piece |
Green chillies (finely diced) |
1 tsp |
Mustard seeds |
1/2 tsp |
Asafoetida |
A pinch |
Curry leaves |
1 spring |
Ghee |
1/2 tbsp |
Method :

Boil rice, adding salt. Cooling slightly.

Mix with curds. Add milk.

Heat ghee. Fry mustard seeds and asafoetida.

Add curry leaves and chopped ginger and chillies. Sauté for a minute.

Switch off the fire and add the rice curds mixture to the pan, toss well. Serve with pickles if you want your meal to be more spicy.
